Cheese can be a powerful thing
Many people have a hard time cutting down on cheese. And I gotta say, I totally get it!
For many cheese is a comfort food. I myself have fond memories of eating ooey goey grilled cheese sandwiches on rainy day afternoons as a kid. Mine were always accompanied with a bowl of Campbell’s tomato soup of course.
Even writing that made me hungry!
That’s the power of cheese. The other power of cheese is to make you fat.
Sorry to be a buzz kill, but it’s totally true. That is if you eat the wrong types of cheese.
There is cheese that satisfies without putting the brakes on your metabolism and forcing you to buy bigger pants.
I thought you might like knowing this better option, so you can once and for all enjoy cheese without undoing your workout.

GOAT Cheese!
It’s way better for your lean bod than cow’s cheese. The reason why? Cow’s cheese has a super slow absorbing protein in it that makes you burn waaay less calories and also makes you bloat out pure and simple.
Goat cheese does not have that buzz kill element to it and tastes great! It also actually packs more protein and will keep you full longer. A little goes a long way. So next time you curl up to Netflix on a rainy day, try out these goat cheese quesadillas, and smile with relief that you’ll still get that firm butt from your morning workout.
- Oh – and sheep and buffalo are also awesome, just more expensive and hard to find. If you see them and can swallow the price. enjoy!

GOAT CHEESE QUESADILLAS
- 1 package Engine 2 brown rice tortillas ( Gluten Free)
3 tbsp ghee
8 slices goat cheese
1 small pre- cooked Yam ( I keep one yam pre-cooked in fridge at all times to add a bit of sweetness and moisture to cooked veg options)
You can also use kimchi, avocado, or tomato to pair with the goat cheese (rather than yam)
** to roast Yam- Preheat oven to 400. Pierce on small yam 2-3 times with knife or fork. Place on baking sheet with parchment paper under cook for 45 minutes.
I use this comfort food go to a lot!

Directions
Simply spread the ghee on one side of the brown rice tortilla
Put in a large pan, ghee side down.
Cover ½ exposed side of tortilla with goat cheese.
Fold over plain side to make a tortilla- cook about 2 mins on low-med each side.
Remove and peel open quesadilla, smear about 2 tsbp cooked yam. Close back up and enjoy!
Great with a salad for dinner or with sautéed greens and a protein on top (egg, sausage etc..)
