Creamy, zesty & filling salad dressing

Total crowd pleaser!   Avocado, coconut cream + jalapeno, honey and fresh citrus juice satisfies big time.  Put all ingredients in a blender and save for up to three weeks:)

Ingredients

  • 1/2 cup hemp or flax oil
  • 1 tbsp ume plum vinegar
  • 3 tbsp raw honey
  • 1 medium jalapeno r 2 small, sliced open and de seeded.
  • 1 big orange juiced
  • 1 big grapefruit juiced
  • 2 small avocados OR 1 large
  • juice of 2 limes
  • juice of 2 lemons
  • 1 tbsp chopped ginger
  • 3 tbsp coconut cream, full fat.
  • water to consistency

Simple, nutritious and delicious!

The avocado and coconut cream, make this salad more satiating. I love this with spinach, kale and chopped bell peppers.  Simply put all the ingredients in a blender and blend until creamy.

Okay, so we know we gotta eat healthy.

But it’s hard on the go- right? When you’re navigating your busy day it’s much easier to grab something from a coffee shop or quickie mart. It’s done and ready to go, no waiting.  I totally get that!

While those fill our hangry bodies, we pay the price later.  That gassy belly, bloat, the crash that gets you nodding off at your keyboard and of course our overall health. There’s simply nothing good in most quick grab foods. You work hard for your body and deserve great stuff!

VIDEO. 4 Easy Steps to your Best Salad

So, you can’t get to an awesome salad bars like Evergreens  and you’re not sure what you really need in your bowl.

There’s so many options:

hardboiled eggs, beans, peas, corn , bell pepper, mushrooms, kale, chard, cabbage spinach, artichokes, cranberries, goat cheese, steak, turkey, tuna, quinoa, beets, zuchinni, cucumber, radishes, celery, walnuts, sunflower seeds, fruit, tofu, 8 different dressings and more!

More is better, right?

Nope! Think again,  put 8 things in your bowl and that’s a ton of work for your body. Hello naptime, bloating and room clearing gas

 

So how do you make the best choice AND actually like how it tastes?

I hear ya, that’s why I’ve created this super simple Video and outline of what you need in your salad, why and how to keep it delicious. This will for sure help you save money as well (those add ons add up!

 

 4 Steps to the best Bang For Your Buck Salad

#1. START with the base – leafy greens

Get the single most dark leafy green.  This means Kale, Chard, Mustard Greens or Spinach.

These are listed from best to 3rd best ( So Kale wins),  The darker the greens, the more nutrients you get! Stuff like calcium, vitamin D, E, K, iron, magnesium

 

#2 MOVE ONTO

Two brightly colored veg. Carrots and green peas OR beets and purple cabbage. The more color the veg has the more good stuff you get!

Anti-oxidants are found in foods deep natural colors. That’s deeper and richer the color the more vitamins and minerals you cash in on.

My favs are bright green peas and beets

 

#3 ADD PROTEIN to Keep Full longer

You got stuff to do! being hungry is a giant inconvenience. This salad better fill you up.

Pick ONE protein: Tuna, Turkey, Hard Boiled Eggs, Ham, Tofu… it’s up to you. If you’re looking for the LEANEST choice- stick to this rule:

Pick a source that moved a lot. So Tuna move more than Turkey, Chickens move more than pigs (ham) – get it?

My fav go to is Fresh Tuna or Diestel Farms Turkey

 

#4 Keep Nutrients in You. Sprinkle on some Healthy Fats

Nuts, seeds, avocados, salad dressing.  Pick 2 seeds OR 1 nut choice and 1 seed. All you need is about 10 nuts max and 3 tbsp seeds – A little goes a long way

What’s best?  I’ll keep it simple – walnuts, pumpkin seeds and sunflower seeds win (more omega 3’s, vitamins and minerals)

Salad Dressing?  DON”T SKIP IT!  Do you know that your body actually cannot absorb vitamin D and calcium without some healthy fat?

Totally True

What you don’t need is a bunch of sugar or cream. So skip the raspberry vinaigrette and ranch. Head for the Olive oil and balsamic or Tahini.

 

I put a couple that I love – Homemade and Store Bought Below.

So there you have it!  Dark Leafy Greens (2 max), 2 brightly colored veg, 1 protein, 2 healthy fats (avocado and walnut) and a little drizzle of dressing to bring it all together.

How to make the best salad that you can’t wait to eat.

Okay!  So of course I love salad’s.

It’s what healthy people eat, right?! We need those bowls of nutrient packed veg to keep us lean, healthy and strong.

But they can get boring. Maaaan I hear that!

So how the heck do we keep salad’s exciting AND make sure we’re getting what we really need?

As busy people we gotta

  1. Hold ourselves over for at least 4 hours
  2. Get in those super powerful nutrients to stay on top of our game
  3. Feel good.. no gas or wanting to take a nap after
  4. Feed our hungry muscles
  5. Actually enjoy it – so we keep eating them and enjoy our salad moments.

Rather than make you do a bunch of reading, I set you up with a handy podcast episode. This way you peel yourself from your computer, take a stroll, get some chores done or learn something great while you sit in traffic:)

How to eat a sandwich and NOT get fat.

I love making it easy to be healthy and actually enjoy food.

So here’s the thing.  Tons of people love sandwiches.

But Sandwiches are really just a bunch of awesome stuff smashed together, with some filler on the top and bottom.

 

The good stuff is in the middle!  It’s the bread that’s a waste or your time and energy. It literally makes you more tired and you have to chew longer.. so my statement is totally true.

 

Now if you love sandwiches and I’m bumming you out, don’t worry!  All ya gotta do is take everything you love between those two slices and put it in a bowl with some greens.

Uh, yeah .. I just tricked you into eating a salad:)

But this is one way to keep your healthy meals exciting!!

 

Step 1.  Think of your favorite Sandwich

Ex: – Reuben Sandwich = Corned beef, saurkraut, cheese (use GOAT or SHEEP)

Step 2.  Take out the bread and put everything else in a bowl (leave out the mayo/dressing)

Step 3.  Add a few handfuls of dark leafy veg + 1 more bright colored veg

Ex: Spinach, Chard + Red Bell Pepper

Step 4. Add one of my 4 TOP Dressing PICKS

Since a sandwich salad sucks without some sort of moisture element – mayo, mustard etc..  here some amazing dressings I love, guaranteed to make any salad exciting and keep you lean!
